Going to dive right in because who has time to read stories about the reason for a recipe?
INGREDIENTS
I typically get all of these ingredients at Trader Joe’s or through Amazon Fresh. See the bottom of this post for more details.
- 2 Eggs
- 2 slices of bread (I use Trader Joe’s Gluten Free Bread)
- Arugula
- Blueberries or Blackberries or BOTH! (Whichever is your favorite. We aren’t actually cooking these)
- Salted Butter or vegan butter if you’re vegan (but if you’re vegan you can’t eat eggs so sorry)
- Olive Oil
- Non-stick Pan (or skillet, idk the difference)
- Spatula
- Optional: Sliced Tomatoes (grape tomatoes or a whole tomato. If you have eczema, you might be allergic to nightshades (like me) so do not use tomatoes)
- Herbs de Provence ( Fancy name for French Spices. The best spice in the world. I add it to everything and know nothing else about spices.)
- Pinch of Salt
- Pinch of Pepper
Step 1
If you like your toast more crispy (like me ~ I get that from my dad) stick the slices of bread in the toaster now. If not, wait until later.
Step 2
Drizzle Pan with Olive Oil and heat Olive Oil until hot.
Step 3
Crack first egg, add it to pan. Crack second egg. Add it to pan.
Step 4
Sprinkle Herbs de Provence, Salt, & Pepper on top of eggs. Let fry for about 1.5 min. Add bread to toaster if you did not do so already.
Step 5
Fry eggs until bottom is easy to flip over. Flip over eggs and let cook (fry) on other side for about 1.5 min. I like my yolk a little runny. If you don’t, keep on frying (maybe 2-3 minutes)
Step 6
Your toast should be just about done. If you don’t have the butter out already, grab it and heat it up in the microwave for 8 seconds. Once toast is done, spread butter on bread.
Step 7
Once the butter is on your bread, your eggs should be fried. Add one egg to one slice of bread. Add the other egg to the other slice of bread.
Step 8
If you’re using tomatoes, add a slice or two on top of each piece of bread with the egg on it.
Step 9
Add as much arugula to the top of each slice of bread (I like a lot to get my greens in!)
Step 10
Add blueberries or blackberries on the side!
Step EAT!
